Refined Sugar Free Orange Coconut Macaroons

Ingredients

Macaroons:

  • 80g (1 + 1/3 cups) coconut
  • 1 tablespoon oat flour
  • 1 tablespoon coconut flour
  • 1 tablespoon buckwheat flour
  • 1 tablespoon honey
  • tablespoons freshly squeezed orange
  • 150ml (2/3 cup) milk
  • 1 egg white

Chocolate Drizzle:

  • 4 tablespoons coconut sugar
  • 2 tablespoons water
  • 2 teaspoons unsweetened cocoa powder
  • milk (if required)

Instructions

  1. Pre-heat the oven to 175°C (350ºF) and line a baking tray with grease-proof paper.
  2. In a large bowl, mix the coconut and all three flours together. Add the honey, milk and orange juice and stir until combined.
  3. Whisk the egg white until thick and frothy and then stir into the other ingredients. You should be left with a mixture that will stick together when you take a ball in your hand. If this isn't the case, add a little more milk.
  4. Roll into seven fairly evenly sized mounds and place on the prepared sheet. Bake for around 20-25 minutes until the outsides are browning. Allow to cool for around 10 minutes.
  5. For the drizzle: place the coconut sugar and water in a pan and cook for around five minutes until it is bubbling and starting to thicken. Remove from the heat and then quickly stir in the cocoa. The mixture will thicken very quickly so when a drizzling consistency is reached, drizzle over each macaroon and then leave to set. If it becomes too thick to drizzle, add a touch of milk to thin it out. Enjoy!
