Healthy Spicy Roasted Chickpeas (made in an Actifry)

Ingredients

  • 450g cooked chickpeas (you can use dried and cook them, or canned)
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon coriander
  • ¼ teaspoon cinnamon
  • ½ teaspoon cayenne
  • ½ teaspoon paprika
  • 1 ½ teaspoons chili powder
  • ½ teaspoon salt

Instructions

  1. If using dried chick-peas, follow the manufacturer's recommendations (ours required an eight-hour soak, and then needed cooking for one hour). If using canned, drain and dry off the excess liquid.

  2. Prepare the spicy coating by mixing all of the dry ingredients above. Take away half and store for use another day, and add two tablespoons of oil to the remaining spices and mix. Throw in the prepared chick-peas and toss them until they all have a good covering.

  3. Place in the Actifry and cook for around 30-45, or if roasting, follow Tiny Rotten Peanuts' instructions and cook in an oven tray for 45-50 minutes. In both instances, they should be cooked until they are very crunchy and deliciously golden brown in colour.
