Chicken and Brown Rice Baked in Homemade Enchilada Sauce

Ingredients

  • 2-3 cups of cooked brown rice
  • 1 tablespoons olive oil
  • 1 onion (chopped)
  • 1 red pepper
  • 3 cloves garlic (crushed)
  • 2 chicken breasts (sliced)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne
  • 1/2 teaspoons cumin
  • 1/2 tablespoon fresh oregano (chopped)
  • 1/2 teaspoon fresh rosemary (chopped)
  • 2 x 400g tinned tomatoes
  • 1 tablespoon ketchup
  • 2 teaspoons lemon juice
  • Salt and pepper to taste
  • 1 small tin of sweetcorn
  • Grated cheese (use as little or as much as you want)

Instructions

  1. Pre-cook the rice and allow to cool completely.

  2. Pre-heat the oven to 180°C.

  3. Fry the onion in a large pan until it softens, then add the pepper and garlic and cook for several minutes. Add the chicken and cook until the outsides are just starting to brown. Add the herbs and spices and cook for two minutes.

  4. Add the ketchup, lemon, sweetcorn and tinned tomatoes and cook for around ten minutes.

  5. Stir the rice into the pan to combine with the sauce and then pour the mixture into an oven dish. Sprinkle cheese on top and bake for around 30-40 minutes.

  6. Serve immediately on its own or with a nice, fresh salad. Enjoy!
