Spiced Wholewheat Kiwi Loaf Cake (low fat and reduced sugar)

Spiced Kiwi Loaf Cake

This lovely spiced kiwi loaf cake is the result of my eternal hunt to come up with low fat and sugar cakes that taste like, well…cakes! Not an easy job! Most lower fat recipes call for bananas, but none of my family (including me) are overly fond of bananas in baking.

There’s also apple sauce, but the thought of peeling and cooking apples before baking is rather off-putting (we can buy ready made in Sweden, but the sugar content is astronomical, which kind of defeats the point when making a healthier cake!).

So, with several rapidly decomposing kiwis in the fridge I had a brain-wave! This kiwi loaf cake is virtually fat free, has little sugar and uses wholemeal flour, but it is still soft and very tasty! You can leave the kiwi loaf cake as it is or you can either leave it as I did, drizzle a little icing or sprinkle over icing sugar.
